TOFU SCRAMBLE BREAKFAST TACOS

Ingredients:
for the tofu scramble:
- Tofu firm 7 oz (200g)
- Margarine 1 Tbsp
- Mushrooms 10 small
- Garlic mashed 1 clove
- Salt and pepper to taste
- Turmeric 1/2 tsp
- Chilli flakes 1/4 tsp
for the tacos:
- Corn tortilla 2
- Vegan cheddar cheese 4 slices
Instructions:
for the tofu scramble:
- Drain your tofu and wrap it in an absorbent towel for 15-20 minutes.
- Heat up a pan, add the margarine, chopped mushrooms and garlic. Season with salt, pepper, turmeric and chilli flakes. Mix and let cook on medium heat for 10 min.
- Add the tofu and crumble it using a wooding spoon. Mix and let cook for 8 – 10 min.
- Turn the heat off and let the tofu scramble cool down.
to assemble the tacos:
- On each corn tortilla lay 2 vegan cheddar cheese slices.
- Top with the tofu scramble and close the tortilla.
- Bake in a preheated oven for 10 min or until the cheese melt (you can use a pan instead)
- Serve and enjoy !
