Tofu scramble breakfast tacos: 2 servings.

for the tofu scramble:

  • Tofu firm 7 oz (200g)
  • Margarine 1 Tbsp
  • Mushrooms 10 small
  • Garlic mashed 1 clove
  • Salt and pepper to taste
  • Turmeric 1/2 tsp
  • Chilli flakes 1/4 tsp

for the tacos:

  • Corn tortilla 2
  • Vegan cheddar cheese 4 slices


for the tofu scramble:

  1. Drain your tofu and wrap it in an absorbent towel for 15-20 minutes.
  2. Heat up a pan, add the margarine, chopped mushrooms and garlic. Season with salt, pepper, turmeric and chilli flakes. Mix and let cook on medium heat for 10 min.
  3. Add the tofu and crumble it using a wooding spoon. Mix and let cook for 8 – 10 min.
  4. Turn the heat off and let the tofu scramble cool down.

to assemble the tacos:

  1. On each corn tortilla lay 2 vegan cheddar cheese slices.
  2. Top with the tofu scramble and close the tortilla.
  3. Bake in a preheated oven for 10 min or until the cheese melt (you can use a pan instead)
  4. Serve and enjoy !
