One of my all-time favorite ‘grab and go’ snack. These no bake peanut butter filled chocolate covered energy balls are so addictive ! Perfect to satisfy my sweet tooth.

Ingredients
- ⅓ cup Oat old fashioned lightly toasted
- ⅓ cup Peanuts whole lightly toasted
- 2 Tbsp Flaxseeds freshly grounded
- ⅓ cup Date paste
- 2 Tbsp Water
- 1 Tbsp Peanut butter
- 6 squares Dar chocolate (80% chocolate)
Instructions
- Lightly toast the old fashioned oat and peanuts in the oven at 180°C for 5 min. Set aside 4 peanuts, we'll add them chopped to the melted chocolate to coat the energy balls. Then grind them to a meal consistency.
- In a food processor add: oats, peanut meal, flaxseed meal, date paste and 2 Tbsp water. Pulse blend to obtain a homogenous dough (you can use your hands as well).
- Melt the dark chocolate in a bain-marie. Let's shape the energy balls in the meanwhile.
- Wet your hand then shape 12 equal balls and flatten the center (to form a hole) as seen in picture. Fill each one with 1/2 tsp of peanut butter. Fold up the edges sealing the peanut butter in the center then roll between your hands to form a ball.
- Finely chope the toasted peanuts we put aside earlier then mix them with the melted dark chocolate.
- Dip each ball into the melted chocolate, place in a plate covered with baking sheet and refrigerate for 15 to 20 minutes or until the chocolate have solidified.
- Keep the balls in an airtight container in the refrigerator until ready to serve or store up to 7 days.
