Spicy peanut tofu marinade

When I make tofu at home, I usually make around 35 oz at once. I store half of it in salted water which is changed once a week to keep the tofu fresh longer (up to one month). With the rest of the tofu, I prepare a herbed olives spread, and marinade some of it as well. This spicy peanut butter tofu marinade is one of my go-to. Delicious and simple to make. It truly takes your tofu to the next level.

Ingredients
  

  • 12 oz Tofu extra firm drained and pressed
  • ¼ cup Soy sauce
  • ¼ cup Peanut butter I'm using homemade
  • 1 tsp Rice vinegar
  • ½ tsp Sugar
  • 1 tsp Ginger fresh
  • 1 clove Garlic fresh
  • pinch Pepper
  • pinch Salt
  • ½ tsp Red chilli flakes adjust the spiciness to your preference
  • 2 Tbsp Water to thin the marinade

Instructions
 

  • Drain and press the extra firm tofu wrapped in a cotton kitchen towel.
  • Place all ingredients in a glass air tight container or a jar.
  • Using a stick blender, blend non stop to get a smooth homogenous consistency.
  • Cut your firm tofu into desired shape and place it in the container with the marinade. Seal the container.
  • Gently swirl around or shake the glass container to fully coat the tofu with the marinade.
  • Let rest at least 1 h before use or store in the fridge for up to 7 days. Enjoy your marinated tofu panned, baked, grilled or cold ! Bonne appétit
