Yield 1 servings: 2 Tbsp tofu spread, 2 rice crackers, 4 apple wedges, 1 tbsp peanut butter (homemade).

Ingredients:

for the tofu spread:

  • Tofu firm 7 oz (200g)
  • Thym dried 2 Tbsp
  • Garlic 1/2 tsp mashed
  • Olives chopped 1/4 cup
  • Salt 1 tsp

to serve:

  • Rice crackers 2
  • Apple 1/2 sliced into 4 wedges
  • Peanut butter 1 Tbsp

Instructions:

for the tofu spread:

  1. In a jar or glass container, mix all ingredients together.
  2. Store in fridge up to 7 days.

let’s plate:

  1. Spread 2 Tbsp of herbed tofu on each rice crackers.
  2. Spread the peanut butter over the apple slices.
  3. Enjoy !
