Ingredients:
for the tofu scramble:
- Tofu firm 7 oz (200g)
- Olive oil 1 tsp
- Garlic mashed 1 clove
- Salt and pepper to taste
- Turmeric 1/2 tsp
- Chilli flakes 1/4 tsp
- Parsley finely chopped 1 Tbsp
to serve with:
- Toasted whole bread.
Instructions:
for the tofu scramble:
- Drain your tofu and wrap it in an absorbent towel for 15-20 minutes.
- Heat up a pan, add the olive oil and garlic. Season with salt, pepper, turmeric and chilli flakes. Mix and let cook on medium heat for 10 min.
- Add the tofu and crumble it using a wooding spoon. Mix and let cook for 8 – 10 min.
- Turn the heat off, let cool down and serve with tasted whole bread.
