Ingredients:

for the oatmeal:

  • Old fashion oat flakes 4 Tbsp
  • Flax seeds whole 2 Tbsp
  • Vanilla extract 1/2 tsp
  • Boiling water 2/3 cup

toppings:

  • Dark chocolate chips 1 tbsp (or 1 square dark chocolate)
  • Walnuts toasted 1 whole chopped
  • Peanut butter 1 Tbsp
  • Blueberries (optional)

Instructions:

  1. Toast the walnuts in a pan for 10 min or in an oven at 180°C/ 356 F for 10 min.
  2. Use a coffee grinder to crush the whole flax seeds into a meal consistency.
  3. In a small bowl mix together the oat, flax seeds meal and vanilla extract.
  4. Pour over the boiling water while mixing vigorously.
  5. Immediately top with the dark chocolate so the heat from the oatmeal will melt it down,
  6. Garnish with peanut butter, the chopped toasted walnuts.
