Ingredients:

for the tofu scramble:

  • Tofu firm 7 oz (200g)
  • Olive oil 1 tsp
  • Garlic mashed 1 clove
  • Salt and pepper to taste
  • Turmeric 1/2 tsp
  • Chilli flakes 1/4 tsp
  • Parsley finely chopped 1 Tbsp

to serve with:

  • Toasted whole bread.

Instructions:

for the tofu scramble:

  1. Drain your tofu and wrap it in an absorbent towel for 15-20 minutes.
  2. Heat up a pan, add the olive oil and garlic. Season with salt, pepper, turmeric and chilli flakes. Mix and let cook on medium heat for 10 min.
  3. Add the tofu and crumble it using a wooding spoon. Mix and let cook for 8 – 10 min.
  4. Turn the heat off, let cool down and serve with tasted whole bread.
