Ingredients:
for the oatmeal:
- Old fashion oat flakes 4 Tbsp
- Flax seeds whole 2 Tbsp
- Vanilla extract 1/2 tsp
- Boiling water 2/3 cup
toppings:
- Dark chocolate chips 1 tbsp (or 1 square dark chocolate)
- Walnuts toasted 1 whole chopped
- Peanut butter 1 Tbsp
- Blueberries (optional)
Instructions:
- Toast the walnuts in a pan for 10 min or in an oven at 180°C/ 356 F for 10 min.
- Use a coffee grinder to crush the whole flax seeds into a meal consistency.
- In a small bowl mix together the oat, flax seeds meal and vanilla extract.
- Pour over the boiling water while mixing vigorously.
- Immediately top with the dark chocolate so the heat from the oatmeal will melt it down,
- Garnish with peanut butter, the chopped toasted walnuts.
